Fresh mud crabs are quickly fried to soften the meat; then sour tomatoes are cut in big pieces to puree, with golden corn stewed in milk. The cooling dish has a flavourful, milky aroma. At the Fortune Room, in addition to making unique local dishes, the skilful chef reinvents the preparation of seasonal vegetables.

Specially selected heat-relieving small winter melon, together with fresh abalone, Jiwei shrimp, scallops, Ryukyu sea cucumber, pork loin, ham, and chicken gizzards, add stock to the double boiled soup.  Simmer slowly for two hours to taste. Green peas are added to splash colour and freshness when served. A refreshing mini winter melon soup brings you a sweet and satisfying experience.

The Capital invites you to savour selected wild red-clay termite mushrooms from the deep Yunnan mountains. They are picked 900 to 2,000 meters above sea level.  This treasure is prepared with minimal cooking, to retain its authentic flavour. You must come to taste this beauty of nature.
