Chef recommends the arrowhead mushroom braised Dongshan mutton with skin.  Selected from Wanning City, Hainan Province, the Dongshan mutton is simmered slowly with a secret sauce, until the meat is soft, before the turnip and arrowhead mushroom are added.  This fragrant pot of slowly steaming casserole overflows with warmth and enriched flavour.

Beef hotpot pays particular attention to soften the meat and sweeten its taste.  The best meat does not require excessive marination. The secret lies in the selection of the part and chef’s art of cutting. This month, The Capital rolls out "Chaozhou" hand-cut beef special with the fresh and sweet clear soup base, to enhance your satisfaction.

The Library takes you to the world of mushrooms in the mountains and ancient forests. We add colourful ingredients to reveal new vistas on your journey of culinary discovery. Chef recommends grilled stuffed cheese mushrooms with eggplant, and fresh, chewy prawn, for a layered gourmet experience.

Fortune Room will showcase sophisticated crab specialties. The chef crafts crab meat with prawn emerald bun, and bean curd roll with crab meat and sea urchin. The bun is made from spinach, filled with chewy big prawn, for your umami delight.
